We recently attended a 5 course menu and beer pairing at Point Royal at the Diplomat Beach Resort’s Brewmaster Club.

The dinner featured beers from Odd Breed Wild Ales which currently is Florida’s only brewery solely focused on producing fine wild and farmhouse ales fermented and aged in French Oak barrels.

Executive Chef Jorge Negron worked closely with Odd Breed Co-Owners Matt Manthe and Dan Naumko to put together a menu where each course had the perfect balance between the components of the dish and the characteristics of the beer.

Chef Negron walked us through each dish while Matt & Daniel explained the nuances of each beer as they were served.

The first course was Wahoo Tiradito, a ceviche type dish paired with Dinkelwheat, a dry hopped spelt saison, hopped with Cascade after aging in French Oak Puncheons.

They followed that up with Steak Tartare & Hackleback Caviar served with Biere d' Avril, a beer initially fermented using lager yeast and then barrel aged with wild yeasts.

Up third was House made Boudin Noir along with one of my favorite beers of the night, Torito Rye, a wild Baltic porter.

The amazing sausage dish was followed by a Sweet Pork Empanada and Mussels paired with Squib Cakes, a golden wild ale with wild blueberries that was well balanced between the fruit flavors and the wild yeast funk. The empanada was incredible – braised pork wrapped in a sweet plantain crust. I’d go back again for those!

They saved the best for the last with the dessert, Sweet Corn Cake with Mascarpone Ice Cream covered with salted sorghum crumbles and a cigar smoked scotch sauce. Words cannot describe how good this dish was. Uppercase Poems Scotch – Double Barrel Aged Wild Barleywine meshed well with this dish.

The General Manager told us that they are talking about making Brewmaster Club Beer Dinners a regular monthly event and hopefully they will.  They already have the next dinner which features Civil Society Brewing scheduled for September 20th.
