Miami brewery crafts unique styles, flavors, and even names for South Florida’s thirsty beer population.

Craft beer drinkers rejoice as Miami’s highly-anticipated brewery enters the scene through South Florida’s most popular restaurants, bars, and events. The brainchild of owner Diego Ganoza, Gravity Brewlab is designed to be the answer to the question Miami has been asking for the past several years, "why can't we have creative, top quality, locally-made craft beer; like most other metropolitan cities in the U.S.?"

 

With brick-and-mortar soon to come, Ganoza and brewers Seth Hammond and Robert Tejon, have already infiltrated the Florida beer-conomy by participating in beer festivals such as Hunahpu’s Day, Berliner Bash, South Beach Food and Wine’s Thrillist BBQ & Blues, and Veritage Miami. They have collaborated and co-hosted food and beer pairings, tap takeovers, happy hour events, and tastings with some of Miami’s finest restaurants including Swine Southern Table & Bar, Khong River House, The Federal, and MC Kitchen while also working on custom-made brews for Macchiallina, Tongue & Cheek, Eating House, Batch, and more.

Drawing from local inspiration, local ingredients, local cuisine, and their geeky passion for the craft, there are no boundaries for Ganoza and his team who let their imagination and creativity overflow when brewing new flavors. Catch them serving custom-made brews like their smokey pineapple “Smokebob Squarepants” wheat ale; their pilsner-based American IPA “33127;” a Belgian wit brewed with guava and lemongrass “Tak Tak;” an English Porter brewed with Panther Coffee’s espresso “Cortadito Coffee Stout;” and their hibiscus-infused saison “[Hip] Biscus.” Permanent favorites that can be had wherever Gravity Brewlab is found include “The Walking Red,” a hoppy, smoked red ale; “Grodzilla Smoked Sour,” brewed with Vienna, Munich, Malted Rye and American Smoke Malt, and their iconic Biscayne Gold Pale Ale.

Ganoza’s future plans include a Wynwood-based brewery with a tasting room as well as a fully-equipped distribution operation.
